I ordered a Cured Mangalitsa Ham for Easter and oh my goodness it was sublime. Unparalleled flavor of the likes we had never expreinced before. The ham ate like beef, easy to carve. I did not use a glaze and am so glad I didn't, the lard that rendered out of the ham is to die for. While the ham was resting I sliced off small pieces to try and something made me dip them ham pieces in the rendered lard in in the pan, thought I had died and gone to heaven so good. I strained the rendered lard into a mason jar and refrigerated. The following weekend while watching a movie I made popcorn and got the idea to melt some of the lard in place of butter, next level popcorn! Thank you for such wonderful pork products. I have submitted a review online once, it didn't get posted to date three days later I receive this direct -email, request to submit another. So here we go again.
I have been buying and cooking with Mangalitsa Pork for years, very familiar with it. My local butcher stopped carrying it several years back, so I was glad to find this source online and ordered a sampling of their products.
1. Ham. -Poorly cut, falling apart, dry and poor taste. Wouldn't recommend. We didn't finish it.
2. Polish Sausages. Polish sausage (Biala Kielbasa) should be ground with at least two different cuts of meat; neck and lower ham, and two different ground sizes. This one was one size and overly fat and tasteless. No spices; garlic wild marjoram, black pepper etc. Disappointed. Didn't finish.
3. Bacon. Mangalitsa is known for its fat, and breed for it. The 'Bacon' was more Lardo, or Slonina/ruckenpeck. One thin 1/8" faint layer of meet tuning through. Not good.
4. Pork chops. Overly fatty, trimmed to 1"-1.5" of thick layer of fat at perimeter. Haven't tried to cook them yet. Building up courage to do so.
In conclusion $200+ order including shipping. miserly benefits. Support your local butcher instead.
These are great brats. Good size for a hot dog bun and to eat two.
Just got my first delivery & all I can say is wow!! That mangalitsa fat is unreal. The flavor makes your eyes roll back in your head. Truly the best & most fresh sausage I’ve ever had. We've all grown so used to what we think pork tastes like and that's a shame. The hogs they use are the same hogs from the 1800s, not modified to have less fat due to that ridiculous "fat is bad" craze.
Don't even second-guess getting an order in. Just do it! You won't regret it.
