I used to raise pork like this in another country. I stopped eating once I got back here to the USA. It was terrible. THIS is finally what we used to eat on farms. The flavor is insane, the fat is fabulous and most people will freak out about the fat and that is what this is all about. Save it, use it for cooking eggs in the morning for basting a steak. One pork chop eating all the fat with it, and you will not be hungry for anything else. Tender, wonderful flavor old world pork, finally.
